"As we graze it grows"

1/2 cup butter
1 cup light brown sugar
1 1/2 cups grated fresh coconut
1/4 cup shortening
1/2 cup granulated sugar
1 egg
1 cup cake flour
1 1/4 teaspoons baking powder
1/8 teaspoon salt
1/3 cup milk
1/2 teaspoon vanilla
Whipped cream

Preheat the oven to 350 degrees.  Melt the butter and brown sugar in an eight inch square baking pan. Sprinkle the coconut over to make an even layer.  Cream together the shortening and granulated sugar until light and fluffy.  Beat in the egg.  Sift together the flour, baking powder and salt.  Combine the milk and vanilla. Add dry ingredients to batter alternatively with milk mixture.  Pour batter over coconut and bake forty five minutes, or until done.  Invert onto a serving plate and serve warm, with whipped cream. Serves 8.
