4 cloves garlic
1 bunch parsley
4 tablespoons olive oil
1 tiny, hot red chili
10 cups of water
1 teaspoon salt
1 tablespoon oil
1 1/4 cups spaghetti
4 tablespoons freshly grated Pecorino or Parmesan cheese
Peel and chop the garlic finely. Wash and dry the parsley, and remove the coarse stalks, chop the leaves. Heat the olive oil in a small pan and fry the garlic gently with the whole chili, stirring constantly. Take care not to burn the garlic. Remove the pan from the heat, cover and keep warm. Bring the salted water to a boil, add the oil, and place the spaghetti into the rapidly boiling water for 8 minutes, or until cooked but not too soft. Drain the pasta in a colander. Discard the chili. Mix the spaghetti with the garlic oil and serve garnished with parsley. Top with cheese.
