2 tablespoons olive oil
1 medium onion, chopped
2 large garlic cloves, minced
1 30-ounce can Italian crushed tomatoes in puree
1 cup water
1 tablespoon chopped fresh oregano or 1 teaspoon dried
Pinch of hot pepper flakes
1/2 teaspoon salt
1 pound of rigatoni
1 cup grated Romano cheese
In a large saucepan, heat olive oil over medium heat. Add onion and garlic and cook 2 to 3 minutes, or until onion is soft and garlic is fragrant. Add tomatoes with puree, water, oregano, and hot pepper flakes. Bring to a boil, reduce heat to medium low, cook partially covered 30 minutes. Season with salt. Meanwhile cook the rigatoni in a large pot of salted boiling water until tender but still firm, 12 to 15 minutes then drain. Pour 2 cups of tomato sauce into a warmed large serving bowl. Add pasta and toss with sauce to coat. Pour remaining sauce over top and sprinkle with 1/2 cup of the Romano cheese. Serves 6.
