Arqua Restaurant New York City Restaurants "As we graze it grows"

1 pound of frozen bread dough defrosted 2 tablespoons cornmeal 3 cups of Marinara sauce (homemade or jarred) 16 thin slices mozzarella cheese, about 8 ounces 1/2 cup grated Parmesan cheese 3 tablespoons shredded fresh basil or 2 teaspoons dried 4 tablespoons olive oil Preheat the oven to 500 degrees.  Divide the pizza dough in half and roll into two 12 inch circles.  Sprinkle each of two baking sheets with 1 tablespoon cornmeal.  Place dough circles on cornmeal.  Spread sauce evenly over dough;  top with mozzarella, Parmesan cheese, and basil.  Drizzle each with 2 tablespoons olive oil.  Bake until crusty and brown around edges, 12 to 15 minutes.  Other topping suggestions:  Fontina cheese, pepperoni, anchovy and smoked salmon. Makes 2, 12 inch pizzas and serves 4. Critics rate "As the Mouse Moves" as HOT!
