"As we graze it grows"

6 pork loin chops, cut 1 inch thick, about 10 ounces each
1/2 teaspoon salt
1/4 teaspoon pepper
6 slices prosciutto or ham
6 dried apricots
1 1/2 tablespoons olive oil
1 cup dry white wine
1/2 cup water

Trim excess fat from chops.  With a sharp paring knife, slit a pocket in the meaty part of the chop, cutting toward the bone.  Season chops with salt and pepper. Stuff chops with a slice of ham or prosciutto and an apricot. In a large frying pan, heat olive oil over medium high heat.  Add pork chops and cook, turning once, 3 to 5 minutes, or until browned on both sides.  Add wine and water, bring to a boil. Reduce heat to low covering tightly, and cook 20 to 30 minutes, or until pork is tender and white throughout.  Serves 6.
