1 1/2 pounds of Semi Sweet Chocolate Chips
2 ounces soft unsalted butter
3/8 cup soybean oil
6 egg yolks
1/4 cup granulated sugar
2 tablespoons water
6 egg whites
Prepare a 10 inch springform pan with butter and flour. Melt chocolate, butter and oil slowly over hot water stirring occasionally until just melted and of uniform consistency. Meanwhile whip eggs, sugar and water until stiff. Add egg yolk mixture to chocolate mixture and combine well. In the meantime, whip egg whites until soft peaks form. Fold in egg whites and combine well. Bake at 375 degrees approximately 20 minutes until just set. Cool one hour and then invert onto cake tray and let cool completely before garnishing with confectionery sugar or chocolate curls.
