2 1/2 cups milk
1/3 cup semolina
1/4 cup brown sugar
Grated rind of 1 orange
6 tablespoons fresh orange juice
3 eggs, separated
3 ounces grated semisweet chocolate
Confectioners' sugar for topping
Preheat the oven to 400 degrees. Butter a shallow 8 cup ovenproof dish, and set it aside while you prepare the soufflé. Pour the milk into a heavy saucepan, sprinkle in the semolina and brown sugar. Heat, stirring the mixture constantly, until boiling and thick. Remove the pan from the heat, beat in the orange rind and juice, egg yolks, and all but 1 tablespoon of the grated chocolate. Whisk the egg whites until stiff, then lightly fold into the semolina mixture in three batches. Spoon into the buttered dish and bake for about 30 minutes, until just set in the center. Sprinkle with the reserved chocolate and confectioners' sugar.
