"As we graze it grows"

1 1/3 cups all purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
2/3 cup milk
1 egg, beaten
Oil for deep frying
3/4 cup sugar
1 teaspoon ground cinnamon
2 large tart-sweet apples, peeled, cored, and cut into 1/4 inch slices
Confectioners' sugar for dusting

Sift the flour, baking powder and salt into a bowl.  Beat in the milk and egg with a wire whisk.  Heat at least 3 inches of oil in a heavy frying pan to 360 degrees or until a cube of bread browns in 1 to 2 minutes.  Mix the sugar and cinnamon in a shallow bowl or plate.  Toss the apple slices in the sugar mixture to coat all over.  Dip the apple slices in the batter, using a fork or slotted spoon.  Drain off excess batter.  Fry in batches in the hot oil, until golden brown on both sides, about 4 to 5 minutes. Drain the fritters on paper towels.  Sprinkle with confectioners sugar, and serve hot. Serves 4 to 6.
