1 1/2 cups ricotta cheese
2 - 3 tablespoons Cointreau or other orange liqueur
2 teaspoons grated lemon rind
2 tablespoons confectioners sugar
2/3 cup heavy cream
1 cup candied peel, such as orange, lemon and citron, finely chopped
2 ounces semisweet chocolate, finely chopped
Chocolate curls, to decorate
Amaretti cookies to serve with (optional)
Using the back of a wooden spoon, push the ricotta through a fine sieve into a large bowl. Add the liqueur, lemon rind and confectioners sugar to the ricotta and beat well until the mixture is light and smooth. Whip the cream in a large bowl until it forms soft peaks. Gently fold the cream into the ricotta mixture with the candied peel and chopped chocolate. Spoon the mixture into 4 glass dishes and chill for about 1 hour. Decorate the ricotta creams with chocolate curls and serve with amaretti cookies.
