3 ounces gorgonzola or other blue cheese
3 tablespoons butter, softened
1 boneless top sirloin steak, cut 1/2 inch thick, 1 1/2 to 2 pounds
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon pepper
2 garlic cloves, minced
In a small bowl , mash cheese and butter together with a fork. Set gorgonzola butter aside. Preheat broiler. Trim excess fat from steak. Brush with olive oil. Season with salt, pepper, and garlic. Place steak on rack in broiler pan 3 to 4 inches from heat; broil 3 minutes on one side, 3 to 5 minutes on the other, depending on desired degree of doneness. Spread gorgonzola butter over one side of meat. Broil 30 seconds longer. Slice meat thinly and serve.
Steak serves 4.
