"As we graze it grows"

8 lamb rib chops, cut about 1 inch thick, about 7 ounces each
1 teaspoon salt
1/2 teaspoon pepper
2 tablespoons butter
2 tablespoons olive oil
1/2 cup dry red wine
1 teaspoon dried thyme
2 tablespoons chopped fresh parsley

Trim excess fat from chops.  Pound chops between two pieces of wax paper or plastic wrap, being careful not to separate meat from bone, until meat if flattened to about 1/4 inch thickness.  Season on both sides with salt and pepper.  In a large frying pan, melt 1 tablespoon butter with 1 tablespoon olive oil over medium heat.  Add chops and cook, turning once, 4 to 6 minutes, or until barely pink in center.  Remove chops to plate and cover with foil to keep warm.  Repeat with remaining chops, adding more butter as needed.  Add wine and thyme to pan.  Boil over high heat, scraping up browned bits from the bottom of pan, until reduced to about 2 tablespoons, 2 to 3 minutes. Add parsley and pour sauce over chops. Serves 4.
