"Hot Banana Soufflé"

|
3 ripe bananas
1 1/2 tablespoons fresh lemon juice
1/3 cup sugar
1 tablespoon cornstarch
1/8 teaspoon salt
1/2 teaspoon nutmeg
1/4 teaspoon lemon peel, grated
3/4 cup milk
3 eggs, separated
2 tablespoons butter
1 1/2 teaspoons pure vanilla extract
Whipped Cream
Peel and slice bananas; toss slices with lemon juice and set aside. Combine sugar, cornstarch, salt, nutmeg and lemon peel in saucepan; add milk and mix well. Cook, stirring, over medium heat, until thickened. Add a little of the hot mixture to beaten egg yolks, then mix with remaining hot mixture. Stir in butter and bananas. Beat egg whites until they stand in soft peaks; fold into banana mixture along with vanilla. Turn into ungreased 1 1/2 quart soufflé dish; place in a pan of hot water and bake in preheated 350 degree oven for 1 hour, or until firm. Serve at once with whipped cream. Serves 6.
