"As we graze it grows"

3/4 cup sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg
Dash salt
3/4 cup water
1 tablespoon fresh lemon juice
5 cups thinly sliced tart cooking apples; 5 to 7 medium apples, pared and cored
2 tablespoons cornstarch
1 tablespoon butter
1 prepared 9 inch graham cracker pie crust
Glaze Topping: 
1 cup dairy cream combined with 2 tablespoons sugar (optional topping)
Other Toppings: Ice cream (optional topping)
Whipped cream (optional topping)
Non-dairy whipped topping (optional)

Combine sugar, cinnamon, nutmeg and salt in medium saucepan;  stir in 1/2 cup water, lemon juice and apples.  Stir gently over medium heat until mixture comes to a boil.  Cover and simmer 15 to 20 minutes, until apples are almost tender, stirring occasionally. Add cornstarch mixed with 1/4 cup water, stirring gently until thickened and clear;  stir in butter. Pour apple filling into pie crust; bake in preheated 350 degree oven for 30 minutes, or until bubbling hot and apples are tender. Top with Glaze Topping, if desired, and return to oven for 6 minutes. Or, top pie with other suggested toppings.
