"As we graze it grows"

1 tablespoon corn or peanut oil
1 onion, finely chopped
6 cups peeled, seeded, and chopped tomatoes
2 cups chicken stock
2 large sprigs of fresh cilantro
Salt and freshly ground black pepper
Coarsely ground black pepper, to serve

Heat the oil in a large saucepan.  Add the onion and slowly dry, stirring frequently, for about 5 minutes until it is soft and transparent, but not brown.  Add the chopped tomatoes, chicken stock, and cilantro to the pan and bring to a boil. Lower the heat, cover the pan, and simmer for 15 minutes, or until the tomatoes are soft. Remove and discard the cilantro.  Press the soup through a strainer and return it to the rinsed pan.  Season and heat through.  Serve sprinkled with coarsely ground black pepper. Serves 4.
