2 tablespoons extra virgin olive oil 2 tablespoons chopped onion 1 garlic clove, minced 1 cup soft bread crumbs 1/4 cup grated Romano cheese 1 tablespoon chopped fresh oregano or 1 teaspoon dried 1/2 teaspoon salt 1/4 teaspoon pepper 4 pieces swordfish, cut 1/2 inch thick, 4 to 5 ounces each 2 cups of Marinara sauce, homemade or jarred
Preheat oven to 350 degrees. In a small frying pan, heat olive oil over medium heat. Add onion and garlic and cook 2 to 3 minutes, or until onion is softened. Remove from heat and stir in bread crumbs, Romano cheese, oregano, salt, and pepper. Place fish pieces on a flat work surface. Spread surface of each with one fourth of bread mixture and roll up jelly roll fashion. Fasten with toothpicks. Place fish in a single layer in an oiled glass baking dish. Pour Marinara sauce around rolls and cover with foil. Bake until fish is cooked through, 25 to 30 minutes. Critics rate "As the Mouse Moves" as HOT!
