"As we graze it grows"

2 tablespoons extra virgin olive oil
2 tablespoons chopped onion
1 garlic clove, minced
1 cup soft bread crumbs
1/4 cup grated Romano cheese
1 tablespoon chopped fresh oregano or 1 teaspoon dried
1/2 teaspoon salt
1/4 teaspoon pepper
4 pieces swordfish, cut 1/2 inch thick, 4 to 5 ounces each
2 cups of Marinara sauce, homemade or jarred

Preheat oven to 350 degrees.  In a small frying pan, heat olive oil over medium heat.  Add onion and garlic and cook 2 to 3 minutes, or until onion is softened.  Remove from heat and stir in bread crumbs, Romano cheese, oregano, salt, and pepper.  Place fish pieces on a flat work surface.  Spread surface of each with one fourth of bread mixture and roll up jelly roll fashion. Fasten with toothpicks.  Place fish in a single layer in an oiled glass baking dish.  Pour Marinara sauce around rolls and cover with foil.  Bake until fish is cooked through, 25 to 30 minutes.
