"As we graze it grows"

10 ounces water packed fresh mozzarella cheese
4 large Roma tomatoes
3/4 teaspoon salt
8 medium leaves fresh basil
1/4 teaspoon black pepper
3 tablespoons extra virgin olive oil

Cut the cheese and tomatoes into 1/4 inch slices.  The slices of cheese should be about the same size as the tomato slices.  When buying the mozzarella look for balls that are about the size of the tomatoes.  Sprinkle the tomatoes with 1/2 teaspoon of the salt and 1/8 teaspoon of the pepper.  Lay the basil leaves one on top of the other and roll them up tightly. Cut across the roll in thin slices, don't cut too thin.  Use 1/4 of the tomato and cheese slices on each serving dish, alternate the cheese and tomato. Drizzle with the olive oil and sprinkle with the remaining salt and pepper.  Top with the sliced basil.  Serves 4.
