"As we graze it grows"

2 anchovy fillets
3 whole garlic cloves, peeled
3 tablespoons low fat mayonnaise
2 tablespoons white wine vinegar
1/8 teaspoon salt
1/8 teaspoon black pepper
2 tablespoons olive oil
2 hearts of romaine lettuce (a head of romaine with the outer layers removed), cut crosswise into 2 inch pieces
2 Roma tomatoes, seeded and diced
2 tablespoons freshly grated Pecorino Romano cheese

Process the anchovy fillets, garlic, mayonnaise, vinegar, salt and pepper in a food processor to a smooth consistency.  Add the oil slowly, to form a dressing which will be slightly thickened and creamy.  In a large bowl, toss the romaine leaves with the dressing until well coated. Divide the leaves on four serving dishes and top with the diced tomatoes and grated cheese.
