Chef's Daily Recipe for 7/4/2001 : Recipe for Potato Salad, Italian Style
"Italian Potato Salad"

|
6 boiled potatoes, sliced
2 large tomatoes, diced
1 large cucumber, thinly sliced
1/2 cup onion, thinly sliced
1/2 cup celery, thinly sliced
1 bunch of radishes, thinly sliced
Dressing:
1/2 cup olive oil
1/4 cup red wine vinegar
1/4 teaspoon garlic powder
1/4 teaspoon oregano
1 teaspoon salt (or salt to taste)
1/4 teaspoon black pepper
Combine all vegetables in a bowl; add dressing; toss well. Refrigerate two hours or more before serving the potato salad.
