"As we graze it grows"

1 pound medium size pasta shells
1 cup onion, diced
4 cloves of garlic, crushed
1/4 teaspoon crushed red pepper
8 small zucchini, sliced very thin (save one for grating later)
3 tablespoons olive oil
4 ripe plum tomatoes, peeled, seeded, diced
1/4 teaspoon Italian herb seasoning
1/2 cup Parmesan cheese, freshly grated
1/4 cup Mozzarella cheese, shredded

Boil water to cook pasta. In a large skillet, frying pan, or wok, sauté the onion, garlic, hot pepper, and zucchini in the oil for 5 minutes.  Add the tomatoes and Italian herb seasoning and cook 3 to 4 minutes.  Drain the pasta, and put it in a large pasta bowl. Pour the sauce over the pasta and mix thoroughly.  Sprinkle the Parmesan and Mozzarella cheeses over the pasta and toss quickly.  Grate the zucchini on top, using the large holed side of the grater.  Serve pasta immediately. Serves 7.
