"As we graze it grows"

1/4 cup olive oil
2 pounds fish fillets - flounder-swordfish-bass-sole
1/2 cup dry Italian white wine
3 cloves of garlic, crushed
1/2 teaspoon Italian herb seasoning
Dash of black pepper
1/4 cup lemon juice, freshly squeezed
1/2 cup fresh Italian parsley, chopped

Mix all the ingredients except the fish in a large bowl.  If grilling, prepare the grill and wrap the fillets in foil with the sauce spooned over the fish.  Cook in foil, 4 to 6 inches above hot coals or high heat.  Grill for 2 to 3 minutes;  remove from the heat when the fish is slightly undercooked.  If baking, wrap the fillets in foil with the sauce and place in a large baking dish. Bake at 425 degrees for 6 to 8 minutes. Keep the fish slightly underdone. Serve fish immediately.
