1 garlic clove, minced 1/2 teaspoon salt 1/4 teaspoon pepper 2 teaspoons chopped fresh oregano or 1/2 teaspoon dried 3 tablespoons red wine vinegar 1/3 cup extra virgin olive oil 2 large ripe tomatoes, about 1 pound 8 ounces arugula or 1 small head of curly endive 1/2 cup oil cured black olives 1 small red onion, thinly sliced
In a large bowl, combine garlic, salt, pepper, oregano, vinegar, and olive oil. Beat with fork to blend. Cut each tomato into 8 wedges. Toss tomatoes, arugula, olives, and onion together in bowl with dressing. Arugula salad serves 4.
