"Chicken, Lemon, Capers & Garlic"

|
2 tablespoons olive oil
1 cup onions, chopped
4 cloves of garlic, crushed
2 pounds of chicken breasts or thighs, skinned
2 cups dry Italian white wine
1 teaspoon Italian herb seasoning
Dash of black pepper or cayenne pepper
2 lemons, sliced very thin with the skins
1 cup fresh Italian parsley, chopped
1 tablespoon small capers
In a large heavy skillet with a lid, sauté the olive oil, onion, garlic, and chicken; cook for 5 minutes, turning the chicken to cook golden brown. Add the wine, Italian herb seasoning, and pepper, and cook for 3 minutes. Add the sliced lemons, parsley, and capers, cover, and simmer for 6 to 8 minutes, until the chicken is soft and tender. Be sure to turn the chicken often in the sauce.
