2 tablespoons green olive oil 12 ounces fillet of salmon 1/2 lemon, juice only 1/4 cup dry Italian white wine 1/2 teaspoon fresh dill, minced; or dill weed 4 large fresh mushrooms 1/4 cup fresh Italian parsley, finely chopped 1/2 lemon, thinly sliced to decorate
Preheat the oven to 425 degrees. Coat an 18 by 18 inch strip of aluminum foil with oil. Cut the salmon into two pieces and place in the foil. Sprinkle the salmon with the lemon and wine, add the dill, mushrooms, and parsley, and seal tightly. Place it in a baking pan and bake for 6 to 8 minutes. Keep the salmon slightly undercooked for taste and texture, as it will continue to cook after it is removed from the oven. Serve with lemon slices. You may also want to add small capers. This Salmon dish serves 2.
