"As we graze it grows"

1 dressed whole sea bass, weighing 3 pounds
Salt
White Pepper
1/2 teaspoon basil
1 clove garlic, minced
1 cup chopped onions
1/4 cup fine grade olive oil
1 can (10 1/2 ounces) red clam sauce
1/2 cup dry white wine
1 cup pimiento stuffed olives, halved
Lemon slices for garnish

Put fish in foil lined baking pan.  Season to taste with salt and white pepper.  Sprinkle basil evenly over top.  Sauté garlic and onions in olive oil until limp;  pour over fish. Bake in preheated 350 degree oven for 20 minutes.  Combine clam sauce, wine and olives;  pour over fish.  Bake 20 minutes longer, or until fish flakes easily with fork. Do not overcook.  Remove fish from sauce and place on warm platter.  Cook sauce over high heat, stirring to reduce in volume slightly.  Pour sauce around fish. Garnish with lemon slices.
