6 whole trout, about 1 pound each 6 tablespoons soft bread crumbs 3 garlic cloves, minced 2 tablespoons minced fresh parsley 3 tablespoons chopped prosciutto or other ham 3 tablespoons plus 1 teaspoon olive oil 1/4 teaspoon pepper Lemon wedges
Preheat oven to 475 degrees. Slash trout diagonally twice on each side, 1/4 to 1/2 inch deep. In a small bowl, combine bread crumbs, garlic, parsley, prosciutto, 1 teaspoon olive oil, and pepper. Lightly fill slashes in trout with bread mixture. Rub 1/2 tablespoon olive oil over each fish. Place fish in an oiled baking dish and bake 12 to 15 minutes, or until fish is just opaque near bone. Serve with lemon wedges.
