New York Restaurants - "As we graze it grows"

2 veal loin chops, cut 3/4 inch thick, about 12 ounces each
1 thin slice prosciutto or ham, cut in half
2 tablespoons crumbed gorgonzola or blue cheese
2 tablespoons olive oil
1 1/2 teaspoons chopped fresh rosemary or 1/2 teaspoon dried
1/8 teaspoon pepper
1/2 cup dry white wine

Trim excess fat from veal.  With a small sharp knife, slit a pocket in the meaty part of each chop, cutting towards bone. Stuff pockets with prosciutto and cheese;  fasten closed with toothpicks.  In a large skillet, heat olive oil.  Cook chops over medium high heat, turning once, about 4 minutes, or until browned outside.  Sprinkle with rosemary and pepper over veal and pour wine into pan.  Bring to a boil, reduce heat to medium low;  cover, cook, turning once, until veal is tender, cooked through but still juicy; about 10 to 15 minutes longer.
