NY CHEF DR. DELICIOUS DAILY RECIPES CHEF'S DAILY RECIPE FOR 2/15/2001 - RECIPE FOR FILET OF FLOUNDER OR SOLE "FLOUNDER FILET & MUSHROOMS"

1 to 1 1/2 lbs. Filet of sole or flounder 1 tablespoon finely chopped onion 1 - 4 ounce can sliced mushrooms and juice 1 tablespoons chopped parsley 1/2 teaspoon salt 1/4 teaspoon pepper 1 cup dry white wine 2/3 cup bottled clam juice (chicken broth can be substituted) 2 tablespoons butter 2 tablespoons flour 2 teaspoons lemon juice 2 tablespoon sour cream
In greased baking dish, place onions, mushrooms and juice, parsley, folded or rolled filets, salt and pepper. Add wine and clam juice. Cover and bake at 400 degrees for 30 minutes. Remove filets to heated serving dish and keep warm. In a saucepan heat butter. Stir in flour. Add liquid from baked dish and cook, stirring until smooth and thickened. Stir in lemon juice and sour cream. Cook over low flame for 5 minutes. Pour over filets. Serve hot. Serves 4 to 6.
