New York Restaurants - "As we graze it grows"

16 lady fingers
1/2 cup dry sherry

Filling:  1 12 oz. Bag semi-sweet chocolate morsels
1 lb. Cream cheese, softened
1 1/2 cups light brown sugar, firmly packed
1/4 teaspoon salt
4 eggs, separated
1 teaspoon vanilla
2 cups heavy cream, whipped

Split lady finger lengthwise.  Place cut side down in 375 degree oven for 5 minutes.  Cool about 10 minutes. Brush cut sides with sherry.  Place approximately 24 pieces around sides of 10 inch spring form pan. Arrange remaining pieces on bottom of pan.  Pour in filling. Chill at least 5 hours, or overnight. 

Filling:  Melt chocolate over hot (not boiling) water.  Let cool about 10 minutes.  Blend cheese, 3/4 cup sugar and salt.  Beat in egg yolks, one at a time.  Stir in cooled chocolate.  Beat egg whites and vanilla until stiff, but not dry.  Beat in the remaining sugar until stiff and satiny.  Fold into chocolate mixture along with the whipped cream. Yields about 20 servings.
