New York Restaurants - "As we graze it grows"

1 1/4 cups small pasta shapes (bow ties)
2 1/2 qt. Water
1 tsp. Salt
6 eggs
1 cup cream
1/2 cup milk
Pinch of salt and freshly ground white pepper
3/4 cup Gruyere cheese
1/2 tsp. Paprika powder
6 oz. Smoked Salmon
1 bunch chives
Butter for greasing the dish

Cook the pasta in boiling salted water for approximately 6 minutes.  Hold under cold running water and drain well.  Separate egg yolks from the egg whites.  Mix the egg yolks, then beat in the cream, milk, salt and pepper to taste.  Whisk egg whites until firm peaks form.  Take half of the cheese and paprika powder and beat into the stiff egg white.  Dice the salmon.  Wash, dry and finely chop the chives.  Mix the pasta, salmon and chives together.  Add salt and pepper to taste.  Preheat the oven to 350 degrees.  Butter four small ovenproof dishes.  Place the pasta into the dishes and pour over the egg mixture.  Sprinkle with the remaining cheese. Place the dishes on the middle shelf of a hot oven and bake for approximately 30 minutes until golden brown.
