NY CHEF DR. DELICIOUS DAILY RECIPES CHEF'S DAILY RECIPE FOR 2/08/2001 - RECIPE FOR STUFFED PEPPERS "STUFFED PEPPERS"

1 tablespoon olive oil 1 small onion, chopped 1/2 pound turkey or chicken sausages, removed from the casing and crumbled 1 teaspoon minced garlic 2 cups cooked rice 1 tablespoon chopped parsley Pinch of thyme leaves 1 cup canned chopped tomatoes, drained 4 large green bell peppers (about 6 ounces each) 1 can (14 1/2 ounces) chicken broth
Preheat the oven to 400 degrees. In a large nonstick skillet, heat the olive oil. Add the onion, sausage and garlic. Cook over medium heat, stirring occasionally, until the onion is tender, about 5 minutes. Remove from the heat and add the cooked rice, parsley, thyme and tomatoes to the sausage mixture. Stir to blend well. Cut the top of each pepper and reserve. Leaving the peppers whole, cut out the seeds and trim out the white ribs from the insides. Divide the filling among the peppers and replace the tops of the peppers. Place the peppers upright in a 9 inch square baking dish. Pour in the chicken broth and add enough water to reach halfway up the peppers. Cover the dish with foil and bake 1 1/4 hours, or until the peppers are just tender. Serve hot or cold.
