NY CHEF DR. DELICIOUS DAILY RECIPES CHEF'S DAILY RECIPE FOR 2/05/2001 - RECIPE FOR FETTUCCINE ALLA ROMANA "FETTUCCINE ALLA ROMANA"

6 tablespoons butter 2 cups heavy cream 3/4 cup grated Parmesan cheese 1 pound fresh fettuccine Freshly ground pepper
In a large saucepan or flameproof casserole, melt butter over medium heat. Add cream and bring to a boil. Cook until reduced to about 1 1/2 cups, 4 to 5 minutes; be careful not to let it boil over. Stir in half the Parmesan cheese and cook 1 to 2 minutes. Remove from heat. Meanwhile, cook fettuccine in a large pot of boiling salted water until tender but still firm, 2 to 4 minutes, drain. Pour pasta into pan with sauce and toss together. Pass with the Parmesan cheese and pepper mill.
