NY CHEF DR. DELICIOUS DAILY RECIPES CHEF'S DAILY RECIPE FOR 1/31/2001 - RECIPE FOR VENISON STEAKS "VENISON STEAKS"

1 pound venison steaks (1 1/2 inches thick) Salt and coarsely ground black pepper 2 tablespoons (1/4 stick) butter 2 tablespoons olive oil 1/2 small hot pepper, minced 1 tablespoon tomato paste 1 tablespoon cranberry preserves or currant jelly 1 tablespoon red wine vinegar 2 tablespoons port or Madeira 1/2 cup red wine Dash of Worcestershire sauce
Season the steaks well on both sides. Heat the butter and oil in a heavy skillet and sear the steaks on both sides, 5 to 7 minutes a side for rare meat. Transfer the steaks to a hot platter and make the game sauce by stirring the remaining ingredients into the pan juices. Bring to a boil, taste for sweet and sour, and adjust by adding more cranberry preserves or vinegar. Pour the sauce over the steaks.
