NYC Restaurant Reviews - "As we graze it grows"

8 assorted pieces of chicken, 3 to 4 pounds
1 teaspoon salt
1/4 teaspoon pepper
1/4 cup flour
2 tablespoons olive oil
1 cup dry white wine
1 cup chicken stock
2 tablespoons butter
1 small onion, finely chopped
8 ounces Pancetta or Canadian bacon, diced
1 pound fresh mushrooms, sliced
1 teaspoon dried thyme

Rinse chicken and pat dry.  Season with salt and pepper. Dust with flour. In a large frying pan over medium high heat, heat olive oil.  Add chicken, in batches if necessary and cook, turning, 5 minutes, or until lightly browned on all sides. Drain off oil.  Return all chicken to pan.  Add white wine and 1/2 cup stock.  Cover and simmer 25 minutes, or until chicken is fork tender.  Meanwhile, in another large frying pan, melt butter over medium heat.  Add onion and Pancetta or Canadian bacon and cook, stirring, about 3 minutes, or until onion is softened.  Add mushrooms and cook 3 minutes.  Add remaining 1/2 cup stock and thyme;  cook uncovered 5 minutes.  When chicken has cooked 25 minutes, add mushrooms and any juices to pan.   Simmer 2 minutes to blend flavors.  Season with additional salt and pepper.
