NYC Restaurant Reviews - "As we graze it grows"

1 (9-inch) pie crust
1 tablespoon soft butter
12 bacon slices or turkey bacon
4 eggs
2 cups whipping cream
3/4  teaspoon salt
1/8 teaspoon nutmeg
1/4 pound natural Swiss cheese, shredded (1 cup)

Spread crust with soft butter;  beat eggs, cream, salt and nutmeg with wire whisk;  stir in cheese and pour egg mixture into crust.  Fry bacon or turkey bacon until crisp and brown.  Drain on paper towels and crumble;  sprinkle in pie crust. Bake 15 minutes at 400 degrees;  turn oven to 325 degrees and bake 35 minutes.  Quiche is done when knife inserted in center comes out clean.  Let stand 10 minutes before serving.
