NY CHEF DR. DELICIOUS DAILY RECIPES DAILY RECIPE FOR 1/01/2001 - RECIPE FOR CLAM SOUP "CLAM SOUP"

3 tablespoons olive oil 1 small onion, chopped 2 garlic cloves, chopped 1 - 14 ounce can Italian peeled tomatoes, drained and chopped 2 cups water 1 cup bottled clam juice 2 large red potatoes, peeled and cut into 1 inch cubes 1 teaspoon dried oregano 2 - 6 1/2 ounce cans chopped clams Pinch of cayenne pepper
In a large saucepan, heat olive oil over medium heat. Add onion and cook 2 minutes, or until softened. Add garlic and cook 1 minute longer. Add tomatoes, water, and clam juice. Bring to a boil. Add potatoes and oregano, cover and cook 20 minutes, or until potatoes are tender. Add clams and heat through, about 1 minute. Season with cayenne.
