NYC Restaurant Reviews - "As we graze it grows"


6 chicken drumsticks, about 1 1/2 pounds
6 chicken thighs, about 1 1/2 pounds
1 teaspoon salt
1/4 teaspoon pepper
2 tablespoons olive oil
1 large onion, finely chopped
3 garlic cloves, minced
1 cup dry red wine
1 14 ounce can Italian peeled tomatoes, drained and chopped
1 teaspoon dried oregano
2 tablespoons finely chopped fresh parsley

Rinse chicken and pat dry.  Season with salt and pepper.  In a large frying pan or flameproof casserole, heat olive oil over medium high heat.  Add chicken, in batches if necessary, cook, turning once, 5 minutes, or until lightly browned on all sides.  Add onion to pan and cook for 2 minutes, or until softened.  Add garlic and cook 30 seconds.  Add wine, tomatoes, and oregano.  Bring to a boil, reduce heat to medium low, cover, and simmer 30 minutes.  Season with additional salt and pepper.  Sprinkle with parsley just before serving.
