NYC Restaurant Reviews - "As we graze it grows"

6 baking potatoes -
3 1/2 to 4 pounds total
4 tablespoons butter, cut up
1 1/2 cups hot milk
1 teaspoon salt
1/4 teaspoon pepper
1/2 cup finely chopped salami
4 ounces Italian Fontina,
or Gruyere cheese, diced
3 scallions, minced
1 garlic clove, minced

In a large saucepan of boiling salted water, cook potatoes 30 minutes, or until tender.  Drain and remove skins.  Return potatoes to saucepan and mash with a potato masher over very low heat until no lumps remain and potatoes are dry.  Add butter and continue to mash until butter is melted.  Gradually stir in hot milk and beat with a wooden spoon until well blended.  Season mashed potatoes with salt and pepper. Stir in salami, cheese, scallions, and garlic.
