DAILY RECIPE FOR 11/24/2000 - RECIPE FOR TURKEY FRIED RICE
"TURKEY FRIED RICE"

|
|
1 cup diced roasted turkey
1 tablespoon soy sauce
1/4 cup oil
1 cup uncooked rice
2 cups chicken bouillon
(2 teaspoons instant bouillon or 2 bouillon cubes dissolved in 2 cups boiling water)
2 tablespoons chopped onion
1/4 cup sliced celery
1/4 cup minced green pepper
1 egg slightly beaten
1/2 cup finely shredded head lettuce or Chinese cabbage
Pour soy sauce over turkey and let stand while starting to prepare rice. Heat oil in large skillet and add rice. Fry, stirring frequently, until rice is golden brown. Add bouillon and turkey. Cover and simmer until rice is almost tender and liquid is absorbed. Add onion, celery, and green pepper; cook uncovered a few minutes. Push rice to side of skillet and add egg. Stir slightly and cook until almost set. Then combine with rice mixture. Stir in cabbage or lettuce and serve immediately.
