1/2 cup skim milk
1 cup boiling water
1 package active dry yeast
1/4 cup warm water
1 1/2 tablespoons olive oil
1 tablespoon honey
1/2 teaspoon salt
3 3/4 cups sifted whole wheat flour
1 egg white
1 teaspoon water
1 tablespoon poppy seeds or sesame seeds

In a 1 quart saucepan, scald the milk.  Add the boiling water.  Set aside until lukewarm.  In a large bowl, dissolve the yeast in the warm water. Stir in the oil, honey and salt.  Let stand until foamy.  Add the milk mixture to the yeast bowl and whisk thoroughly.  Add the flour 1 cup at a time, stirring until a soft dough forms.  Form it into a ball.  Leave the dough in the bowl and cover with a damp cloth.  Set in warm, draft-free place until doubled in bulk (about 2 hours).  Punch down the dough. Place on a lightly floured board and roll into a 10" x 14" rectangle.  Cut lengthwise into 6 strips.  Using 3 strips at a time, braid the dough into 2 loaves.  Coat a cookie sheet with non stick spray. Place the dough on the sheet and set in a warm place until doubled (about 45 minutes.)  In a cup, whisk together the egg white and 1 teaspoon water.  Brush over the top of each loaf.  Sprinkle with the poppy seeds or sesame seeds.  Bake at 400 degrees for 10 minutes.  Then lower the temperature to 350 degrees and bake for 10 minutes, or until golden brown.  Let cook for 20 minutes.
