1/3 cup corn oil
1/4 pound mushrooms, sliced (1 1/2 cups)
1 medium onion, cut into very thin wedges
(about 1/2 cup)
2 cloves garlic minced or pressed
1/2 pound broccoli, cut into flowerets (2 cups)
1 medium zucchini, sliced and halved (2 cups)
2 carrots, cut into julienne strips (1 cup)
1/3 cup dry white wine
1/4 cup chopped parsley
1 teaspoon dried basil leaves
1/2 teaspoon salt
1/8 teaspoon pepper
1/2 pound spaghetti, cooked
1/2 cup freshly grated Parmesan cheese

Heat corn oil in large skillet over medium heat.  Add mushrooms, onion and garlic;  cook, stirring frequently 1 to 2 minutes.  Add broccoli, zucchini and carrots;  cook, stirring frequently 2 to 3 minutes.  Stir in wine, parsley, basil, salt and pepper; simmer 4 to 5 minutes, or until vegetables are tender-crisp.  Cook spaghetti according to package directions.  Toss together hot, cooked spaghetti, vegetable sauce and cheese.
Serve at once.
