4 scallions thinly sliced
3 tablespoons minced fresh coriander
2 tablespoons reduced sodium soy sauce
1 - 2 teaspoons grated fresh ginger
1/4 teaspoon ground black pepper
12 ounces mackerel fillet, divided into 4 equal pieces
12 thick lime slices
8 ounces broad noodles

Cut 4 large squares of foil or brown paper.  Coat the top side of each piece with non stick spray.  In a medium bowl, toss the scallions, coriander, soy sauce, ginger and pepper together.  Set aside.  Place a mackerel fillet on half of each foil or paper.  Divide the scallion mixture and the limes over the fillets.  Fold the empty half of the foil or paper over the fillet and crimp the edges to seal tightly.  Place on a large cookie sheet. Bake at 450 degrees for about 8 minutes.  While the fish is baking, cook the noodles in a large pot of boiling water for 8 minutes, or until just tender.  Drain and serve with the fish.  Makes four servings.
