10 oz. Prawns
1 tbs. Lemon juice
1 small onion
2 cloves garlic
2 tbs. Butter
1 carton cream (8 oz.)
1 carton cream cheese (6 oz.)
2 cups freshly grated Parmesan cheese
4 qts. Water
3 tsp. Salt
1 tbs. Oil
3/4 cup green noodles
1 pinch each salt and freshly milled white pepper
1 tsp. Dried tarragon

Rinse the prawns under cold water in a colander, drain and sprinkle with lemon juice.  Peel and finely chop the onion. Peel and crush the garlic.  Heat the butter in a large pan, and briefly fry the prawns.  Add the diced onion and garlic and fry lightly.  Pour the cream and cream cheese over the prawns and bring to a boil.  Add 1/2 cup Parmesan, and leave the prawns to cook over low heat for 5 minutes.  Bring the water to a boil, add salt, oil and pasta. Cook pasta until al dente, then leave to drain well.  Season the creamy prawn sauce with salt, pepper and tarragon, and serve with the Parmesan.
