Roasted Monkfish

4 monkfish fillets, about 1/2 inch thick
(6 ounces each)
3 garlic cloves, cut into thin slivers
1 tablespoon olive oil
1/4 teaspoon salt
1/8 teaspoon freshly ground pepper
8 sprigs of fresh thyme or 1/2 teaspoon dried thyme leaves
2 lemons, thinly sliced
1/4 cup reduced-sodium chicken broth
1/4 cup white vermouth or dry white wine

Preheat the oven to 400 degrees. With the point of a small paring knife, make shallow incisions all over the fish filet and insert a garlic sliver into each cut.  Brush a small baking dish with the olive oil. Sprinkle half the salt, pepper, thyme, and lemon slices over the bottom of the dish.  Arrange the monkfish fillets in the dish in a single layer on top and season with the remaining salt, pepper, thyme and lemon slices.  Pour the chicken broth and wine over the fish and bake 12 to 15 minutes for every 1/2 inch of thickness, or until the fish is opaque to the center.  Serve the fish with some of the pan juices spooned over the top.
